Make sure the surface of the food is dry. Sadly there arent a lot of cookbooks out there that feature the cuisine from Taiwan. I always thought the texture of this dish was ruined by the excessive powdery-ness of it. this will be nice and crispy. Asian grocery stores as well as some Latin or Mexican grocery stores carry it. Mix to coat all the chicken and cover with plastic wrap. Will other types of starch work, or does it have to be sweet potato starch? I know where to get the stuff, but it is just another ingredient laying around that I dont normally use.
